Vegan Chocolate Orange Crêpes
Ingredients:
For the Crêpes
- 1 ½ cups whole wheat flour
- 2 tablespoons brown sugar
- ¼ teaspoon baking soda
- 1 ½ cups chocolate soy milk
- 1 tablespoon olive oil
- ½ tbsp cacao powder
- ½ tsp ground cinnamon
- ¼ tsp ground ginger
- ½ teaspoons ground nutmeg
- ¼ tsp cloves
For the Cream
- 1 tsp orange juice
- 1 can full fat coconut milk chilled
- 1 tbsp powdered sugar
Topping
- 2 oranges sliced
Directions:
- Combine all the ingredients for the crêpes in a bowl excluding the oil. Heat the oil in a frying pan and add about 3 tbsp worth of batter to the pan. Cook the crêpe until bubbles start to form on the top then flip it over.
- For the cream combine the orange juice and powdered sugar in a bowl. Open the can and scoop out the hard top part of the coconut milk out and add to the bowl. With an electric mixer mix until the cream becomes stiff.
- Peel the oranges and slice thinly. Once everything is finished you can assemble your crêpes. Enjoy!
